Start your water for your grits, add a 1/3 cup extra water, then add 2 bay leaves 1 teaspoon salt, 1 tablespoon butter, 1/2 teaspoon crab boil Cook 6 to 8 cups quick grits.
Leave your pot on the stove with the lid on, turn the fire off. You will be adding to the pot as you go.
Add 4 to 8 ozs of velveeta mild Mexican cheese, and season with Tony Chachere's to taste, add 3 or 4 shakes worcestershire sauce stir into pot.
You wiil need.
<3/4 cup onion chopped>
<1/2 cup green bell pepper chopped>
<1/2 cup celery chopped>
<1 tablespool roasted garlic>
Saute above in 2 tablespoon butter, salt & pepper & 1 bayleaf saute until soft, not brown. add to your pot.
Saute 8 oz sliced mushrooms in 1 or 2 tablespoon butter add 1 to 2 oz white zinfandel wine and cook untill wine is gone. add to your pot
I like to add some red and yellow bell pepper cut into strips about 1/4" X 1 1/2". (About 15 each) Add to your mushrooms about 1 min before you take them off the fire. do not over cook these bell pepper. Because they or sweet,
Drain crawfish, season with tony's, now, Saute for 2 min, do not overcook as crawfish is allready cooked. If you are using fresh boiled, crawfish just peel and add the tails to your pot do not saute.
Mix well and taste, add salt, pepper, tony's, only as needed. For a little bite, add 1/2 teasp crushed red pepper, 2 shakes worcestershire
