Creamy Cole Slaw Another good accompaniment to just about any summer menu.
1/2 head small green cabbage, finely shredded (about 3 1/2 cups) 2 Tbls. minced red onion 1/4 cup mayo 1/4 cup sour cream 1/4 cup cider vinegar 1/4 cup sugar
(light) salt and (extra) freshly ground black pepper, celery seeds, to taste Blend mayo, sour cream, vinegar and sugar in medium bowl. Add cabbage, onion and toss to mix thoroughly. Taste; season with salt and pepper as needed. Refrigerate at least 2 hours for flavors to develop. Keeps in refrigerator (covered) 2 days.
You can buy good over the counter slaw mixes, try looking with the salad dressings at the grocery store Mix with cabbage, suger,onion and toss to mix thoroughly. Add spices.
___________________________________ Crab Stuffed Deviled Eggs
* 2 cups of crab meat * 1 cup of mayonnaise * 1/2 Tablespoon of Tony's seasoning * 1 teaspoon of vinegar * 1/2 Tablespoon of Worcestershire sauce * 1/3 cup of celery chopped fine * dash of garlic powder * dash of Tabasco sauce * 12 large eggs
Preparation Instructions: Boil the eggs in a pot of water. When done, drain off water, peel and cut eggs on a tray. Using a large mixing bowl, add vinegar, then crab meat and rest of the ingredients in order. Sprinkle garlic powder to taste, and add a dash of Tabasco sauce. Throw in the egg yolks and mix all together. Place mix in the center of egg. Sprinkle with parsley, chill and serve. Makes 8 servings
FRIED CORN 1 can sweet corn. Drain the water; Add 1 tablespoon bacon drippings, and about 4 o5 slices fried bacon chopped. To save time I admit it I buy the bacon already cooked. Do not overcook crispy is the key. If you want Mushy asparagus boil the hell out of it. You can eat it with a straw.
